How to make Cannabis-Infused Barbecue Sauce

Spring time is just around the corner and it’s time to fire up your grill! Time to plan that amazing BBQ this weekend at home and kick it up a bit!  One of the easiest ways to tackle that weekend hunger is to fire up the grill and get some barbecuing done!

Coating your grillables with cannabis-infused barbecue sauce will satisfy your needs. The sauce gives the ultimate experience as it serves as the perfect seasoning to add to your chicken, sausages, or beef. It can also be added to vegetables or tofu, to give it that spicy buzz. Chefs and cannabis enthusiasts are coming up with exciting new recipes all the time!

Ingredients

1 tablespoon of Kosher salt

2 Spanish onions (diced)

2 tablespoons smoked sweet paprika

3 tablespoons tomato paste

4 garlic cloves (crushed and finely chopped)

¼ cup canola oil

½ cup bourbon

1/8 cup minced onion

1 tablespoon ground allspice

1 tablespoon ground cumin

½ cup brown sugar

1 cup ketchup

½ cup apple cider vinegar

¼ cup molasses

3 tablespoons cannabutter* (strengths can vary)

2 tablespoons yellow mustard

2 tablespoons Worcestershire sauce

 

(*You can also use Distillate | 1ml syringe = about 9mg THC per tablespoon)

The ingredients listed above should yield about 3 cups of barbeque sauce with each teaspoon containing about 4mg of THC.

Preparation

Decarbing Cannabis: Preheat your oven to 245ºF. Place 1 cup of cannabis buds on a non-stick, oven-safe tray. Cover the tray with parchment paper to prevent sticking. Insert the tray into the oven and set a timer for 30-40 minutes. Older, drier cannabis may require less time. Every 10 minutes, gently mix the buds with a light shake of the tray to expose the surface area of the buds equally. Then grind or chop the decarboxylated cannabis coarsely.

Add 1 cup of water and 1 cup of butter into a stockpot or saucepan. Simmer on low and let the butter melt. Adding water helps to regulate the temperature and prevents the butter from scorching. As the butter begins to melt, add in your coarsely ground cannabis product. Maintain low heat (ideally above 160ºF but never exceeding 200ºF) and let the mixture simmer for 2 to 3 hours, stirring occasionally. The mixture should never come to a full boil.

Strain the cannabutter by setting up a funnel on top of a jar and line it with cheesecloth. Once the butter has cooled off, pour it over the cheesecloth funnel and allow it to strain freely. (Tip: Squeezing the cheesecloth may push more bad-tasting plant material through).

Refrigerate the jar of butter. If excess water forms at the bottom of the jar, you can remove the solid butter with a knife and drain the water out. (The butter will need to refrigerate for about an hour before removing the water.)

 

Add salt, onions, and oil to a saucepan that has been placed over medium heat. Cook until lightly brown before adding the garlic, cook for 2 minutes. Next, add the tomato paste and lightly cook for 2 minutes while stirring frequently. Remove from heat to add the bourbon. Return the saucepan to medium heat, add brown sugar and cook for 2-3 minutes until the sugar is completely dissolved. Next, you can add the rest of the spices. Let it cook for 5 minutes and stir frequently before adding the molasses, mustard, ketchup, vinegar, and Worcestershire, simmer on low heat for 15 minutes while still stirring the mixture until it thickens. Let the mixture cool slightly, then add your cannabutter or oil, and whisk or blend for 1 minute.  Reduce speed until you achieve a very shiny consistency. After ensuring it comes out to your satisfaction, you can store the barbecue sauce in an airtight container to be refrigerated until it is needed.

 

Low and Slow

You should remember to be careful with dosing your infusions. Try to make it as low as possible as edibles take some time to kick in and can be quite potent when not monitored properly. You can choose to test it out first with small dosages before increasing or decreasing the dosage as appropriate. At the end of the day, safety while having fun is quite important and should not be taken lightly!
